Vegan MoFo Day 13!
Since I was sick Joey and I whipped up a favorite soup of ours from Appetite For Reduction. A little Arabian Lentil & Rice Soup!
RECIPE:
2 tsp olive oil
1 medium onion diced small
6 cloves garlic minced
several pinches black pepper
1 tsp salt
1 tbsp ground cumin
1 tsp coriander
1.5 cups small died carrots
1/2 cup brown basmati rice (we used white basmati rice cuz we had it)
1 tsp lemon zest
6 cups veggie broth
1/4 cup fresh squeezed lemon juice
Preheat 4qt pot over medium-high heat. Saute onions in oil until translucent. Add garlic, pepper, & salt-saute another minute. Add spices & stir continuously for about 15 seconds to toast slightly. Add carrots, lentils, rice, zest, and broth. Cover pot & bring to boil. Once boiling lower heat to simmer & cook for 40 minutes until lentils are creamy & rice is tender. Stir occasionally to prevent soup from burning at bottom (add water to thin soup if necessary). Add lemon juice. Taste seasoning add more as needed. Let soup sit 10 minutes for maximum flavor. Eat to your hearts content!
